Different varieties of the amaranth “grain” are grown in Asian and Latin American countries. It is more accurate to call amaranth a “pseudo-grain”. It is not in the classification of grasses, like wheat for example, and is often chosen as a substitute by people allergic to gluten, since it does not contain gluten.
This grain substitute is often referred to as the “crop of the future” along with quinoa. It is easily cultivated and collected and grows readily in dry, hostile climates. Amaranth is also high in protein and has most of the essential amino acids, making it higher in protein than wheat or rice.
The ancient Incas of Peru grew and ate this super food, and was one of their main staples in the daily diet. Today, it is called “kiwicha” and is commonly toasted in a similar way as popcorn and often mixed with honey and made into balls to eat.
Amaranth can be used in many recipes as a substitute for other grains. It is often chosen to replace wheat or other ingredients since it is gluten free and has higher amounts of protein.
